

{"id":207928,"date":"2025-08-21T03:54:06","date_gmt":"2025-08-21T08:54:06","guid":{"rendered":"https:\/\/horsesaxe.com\/denison\/?page_id=207928"},"modified":"2025-09-04T11:35:34","modified_gmt":"2025-09-04T16:35:34","slug":"gluten-free","status":"publish","type":"page","link":"https:\/\/horsesaxe.com\/denison\/gluten-free\/","title":{"rendered":"Learn about Gluten Free"},"content":{"rendered":"\n<h1>\n\t\t\tLearn about Gluten Free\t<\/h1>\n\t<p>Hi,<\/p>\n<p>My name is Mike.\u00a0 I&#8217;m one of the owners of The Horse&#8217;s Axe in Denison, Tx.\u00a0 Looks like &#8220;the cat is out of the bag&#8221; about our GF Kitchen.\u00a0 So, I feel it&#8217;s necessary to create a page to explain everything about our kitchen.<\/p>\n<p>I&#8217;ve been gluten free for over 12 years.\u00a0 I understand how hard it can sometimes be for people like myself to find places to eat.\u00a0 I&#8217;ve experienced it.\u00a0 I also understand the effects gluten can have on the body.\u00a0 I&#8217;d like to point out that our kitchen is not &#8220;certified&#8221; gluten free, nor is every single food product we use &#8220;certified&#8221; gluten free.\u00a0 I check the labels of all the food and sauces to make sure there are no wheat or wheat products in them.\u00a0 But, as all products say, we can&#8217;t verify what may happen in a food processing plant.\u00a0 There are also some things like &#8220;spices&#8221; or &#8220;flavoring&#8221; listed as ingredients which are impossible to get answers on.\u00a0 I&#8217;ve tried.\u00a0 Therefore, I want you to be able to make an educated decision about whether or not you want to eat here.\u00a0 I&#8217;ve created a list with all of our food products and their ingredients.\u00a0 I&#8217;ve also taken an additional step and asked AI to research all ingredients, and I&#8217;ve listed those answers as well.\u00a0 The only things not on the list are naturally gluten free items like Onions, Green Peppers, Limes and other fresh fruits and vegetables we buy from a grocery store.\u00a0 We have some individually wrapped candy bars that are <em><u>not<\/u><\/em> gluten free, but those are the only items.\u00a0 We have individually packed potato chips that are &#8220;certified&#8221; gluten free. \u00a0Everything cooked in the kitchen is on this web page.<\/p>\n<p>A question we frequently get asked is, &#8220;why don&#8217;t you advertise your gluten free kitchen?&#8221;\u00a0 My answer has always been, &#8220;because people who don&#8217;t eat gluten free won&#8217;t want to eat here&#8221;.\u00a0 Let&#8217;s face it, gluten free food does not have a reputation of being &#8220;good&#8221;.\u00a0 To those of you who are gluten free, you know what I&#8217;m talking about.\u00a0 So, we&#8217;ve kept it a secret.\u00a0 We&#8217;ve quietly informed the people who come in and ask about gluten free food, and as you would expect, they&#8217;ve been thrilled!<\/p>\n<p>We also have a fairly large selection of gluten reduced beer&#8230;yes, beer!\u00a0 I got tired of going to restaurants and asking if they have any gluten free beer and being told, &#8220;Yeah, we have Angry Orchard&#8221;.\u00a0 While ciders are good, they&#8217;re not beer.\u00a0 So, I&#8217;ve made it a small mission of mine to find gluten reduced beers.\u00a0 When I say gluten reduced, that means we have beers that are measured at 20 parts per million or less.\u00a0 From the National Celiac Association website: <em>For individuals with celiac disease, the generally accepted safe level of gluten is less than 20 ppm (parts per million). This is the cut-off established by the FDA in 2013 for foods labeled gluten free. Foods that are certified gluten-free (vs. labeled but not certified) must comply with various protocols and not exceed different cut-off levels of gluten, at or lower than 20 ppm, depending on the certifying organization.\u00a0 The bottom line is that any certified gluten-free food can be considered a safe choice, as it must be below the FDA (and generally accepted) safe cut-off level of 20 ppm of gluten.\u00a0 Since ppm refers to a concentration and not to an absolute amount, total gluten intake is also related to <u>how much<\/u> of a given food is consumed.
